Beardslee Barrel Soured Dubbel Cut Saw

The Barrel Soured Dubbel Cut Saw is a Belgian Style Dubbel that is a blend of 2 aged barrels and a touch of our fresh Grappel Belgian Tripel Ale.  A 2-year-old Mark Ryan Winery Merlot barrel full of our 2016 batch inoculated with Belgian Roeselare Yeast, 5 labs of mission figs and 3 lbs of golden raisins, was blended with a 1-year-old Makers Mark Bourbon barrel of our 2017 batch that was inoculated with lactobacillus.  To round it out, a small percentage of this summer’s Grappel Tripel was blended in. Aromas of biscuits, crackers, sawdust, and tart fruit greet the nose while flavors of fig, apricot, sweet toffee and ethanol coat one’s mouth producing a long lingering finish.
